A Lot of Cooking and A Yummy Cake



Hi friends! Happy Monday 😀

I feel like my entire weekend was spent cooking! I got up Saturday morning 
and made some breakfast tacos. 
I love to cook a big breakfast for David and I on Saturdays and 
usually we will eat while watching one of the couples we follow, 
who live on narrowboats in the U.K.

I can imagine that sounds like a strange thing to do while eating breakfast, but
it's something we enjoy watching together and they are all fun and lighthearted,
which seems a good way to start the weekend.




As I shared on Instagram on Saturday...making breakfast tacos is a great way
to fill your freezer.
Brown your breakfast sausage, cook the hash browns, scramble the eggs, 
then add some shredded cheese.
Mix in a big bowl and divide onto tortillas.

I wrap each taco individually and put them in a freezer bag for breakfast during the week.

Each morning I unwrap the taco, stick it on a plate and heat from frozen for 1 minute. 
It comes out just as fresh as they were the first day.

This is how I like to make freezer meals.
I make a little extra of whatever we are already eating and 
I put a portion in the freezer
for another day. 


Later I made a big pot of chili, which we would be eating on Sunday,

after church.

We normally have our family dinners during the week, 

but all the kids were busy last week and Sunday

was the one day we could all get together,

so Sunday it was!

I also took some tamales out of the freezer, which

I would heat in the crock pot while we were at church.



While I was on a roll, I made some homemade ranch dressing, which

is so yummy!

The recipe is for the homemade Ranch Mix, but at the bottom of the recipe, 

she offers the instructions for a Ranch Dip or Ranch Dressing.

I keep a small jar of the Mix in my fridge.

You only need a 1/4 cup of the mix to make the dressing or dip, but

you can also use the mix on anything you would normally use a Ranch packet for.

But you know what's in it, because you put it all together!



It's so easy to make (mayo, sour cream, milk and the Ranch mix).






Lastly, I made this cake for Sunday's lunch with the kids. It would be Collin and Morgan's 2nd anniversary and since we were all having lunch together, I wanted to make them a treat.

The mix was from King Arthur's Baking Co., as was the buttercream frosting mix. I never knew that buttercream frosting took almost 3 sticks of butter! No wonder it's so amazingly delicious! 


Needless to say, by Saturday evening I was tired 😓 That's a lot to cook in one day and my feet were telling me to sit!


But it was worth it, because Sunday I put the tamales in the crock pot before we left for church, so they were piping hot when we got back. I took the chili out of the fridge and heated it up on the stove and we nibbled on homemade salsa that Alex made while we waited on the chili to heat. 

Then, of course, it was time for coffee and cake.

And time for this...💙 

That's the best part of family dinner (or lunch), is the family time, with everyone in the living room or kitchen, moving around, asking for drinks or toys or saying they want to go for a jeep ride with PawPaw. 

It's noisy and chaotic, but I wouldn't trade it for anything!

And...we have leftovers, so I'm not cooking tonight!

  1. I do like chili anytime of the year but it is even better when it is cold out.
    The cake sounds delicious and Happy Anniversary to Collin and Morgan.

  2. You certainly did cook lots! It all looks delicious
    How sweet for the cousins to be just 5 months apart. I expect they will be best buds. All of my grands like each other but the 2 cousins in the middle that are 4th and 5th graders are just crazy about each other.

  4. What a great weekend of delicious food! I also love making our own ranch dressing. I love watching cooking shows on The Food Network, and Ina Garten (the Barefoot Contessa) taught me how to do make it way back in the early days of our homeschooling. I use equal parts of sour cream and mayo for ours, and milk, and add in different sauces/seasonings/spices. I've used taco seasoning before and a favorite for the boys is buffalo ranch- with buffalo sauce. They all love a little bit of heat. Also, making it is so much healthier! I love the picture of you with the grand boys!

  5. Three sticks of butter - whoa buddy! I know that was tasty!! I have never tried breakfast tacos but sounds like such a good idea. Breakfast is my favorite but I sometimes struggle with "the same ole thing" in the morning! Thanks for the ranch dip recipe. I've been looking for one of those!
